  • Beer is traditionally made form cereal grains with barley being the most important for quality.
  • Wheat, rice, corn, rye and oats are also used in smaller amounts.
  • Starches in the grain must be converted to sugars for fermentation to occur.
  • This is accomplished through germination of the grain to produce enzymes that turn starch into sugar, creating malt.
  • The malt is then dried in a kiln.
