B4.13 Preventing Decay Flashcards
Define preservation
Processes that prevent food or other organic material from decaying
Canning,freezing, drying, salting
Explain canning
Food sealed in metal container
Heated to kill any microbes
Prevent the entry of oxygen and any other decomposer microbes
Explain cooling
Placed in fridge (4 degrees)
Reproduction of decomposers is slowed down
Explain freezing
Keep food at low temp often -5.
Decomposers stop reproducing
Explain drying
Food (eg pasta) dried.
No water- decomposers do not grow/reproduce
Explain adding salt
Some foods are salted (cured meats/fish)
salt causes water to be drawn out of the microbes by osmosis- kills them.
Explain adding sugar
Sugar causes water to be drawn out of the microbes by omosis
Adding vinegar
Acid kills decomposers
