one of Australia’s most knowledgeable wine makers. Dr. Tony Jordan needed only 4 years to to succeed at Australia’s Domaine Chandon compared to almost 20 at California’s. This is because Jordan was able to draw upon the lessons learned at Chandon Napa, There were a number of potential sparkling wine areas in Australia, and Jordan knew where they were.

Q

Picking early

A

okay for cheaper fizz. For premium-quality sparkling sites should be established to allow ripe grapes to be picked with the right attributes for classic sparkling wine. Picking early cannot achieve this. furthermore, Australians use malo to add complexity this is an issue when there is a lot of malic acid due to early picked grapes
