What does the health mark indicate?
Indicates that the animal/carcass has undergone AMI and PMI in accordance with regulations and that it is fit for human consumption
Who is responsible and applying of the health mark?
OV or OA under supervision of OV after PMI
What is the exception to when health mark can be applied?
- Large wild game is considered fit for human consumption after PMI only (as AMI difficult to see)
- Before trichinella or TSE results, if the CA has a system ensuring traceability but NO meat parts leave the establishment until a negative result is obtained
Where and how is the health mark applied?
- On external surface on each piece of meat (on 3 places?)
- Stamping in ink or by hot branding
What is the arrangement of the health mark and appearance?
6.5cm wide and 4.5cm high with information in perfectly clear readable letters/numbers (1cm high)
Can any ink be used?
No, must be authorized according to union rules on color in foodstuff
What is the letter arrangement of the health mark?
Upper part: Must contain a two-letter country code or is-ocode of MS e.g., SK, SE
Center part: Approval numbers of establishment. If applied in SH within a community, must include the abbreviation EC
Lower part: No. of OV who carried out health inspection
