- Simple

What can you tell about wrapping and packaging of meat?
Wrapping = lays in direct contact with the product, covering/wrapping the product. First protective layer.
Packaging = Further packaing of the already wrapped product as an additional outer protective layer during transport, storage.
What information must be include on label of meat package?
- Type of meat
- Manufacturer
- Expiration date
- Price
What are the simple packaging methods used and its qualities?
Foils, bags without air drainage (does not extend shelf life)
What are the vacuum packaging methods used and it’s qualities?
Plastic foils while aspirating air (prolongs shelf life, can effect color and give sour odour due to bacteria)
What are the modified atmosphere packaging?
CO2 30%, Oxygen 5%, Nitrogen 64%.
CO2 - inhibitory effect on microbial growth and oxidation processes.
