Describe the climate of Jerez?
A hot sunny, mediterranean climate although the vineyards that are near the coast are on average a little cooler, and benefir from the humid westernly wind know as the poniente. The extra hot levante which blows from the east can set temperatures soaring. Which can stress vines and damage grapes. Annual rainfall is high, but in the growing season its limited.
Explain the effect of albariza soil?
Has very high chalk content, providing good drainage, but more importantly excellent water holding capacity so the vines can survive hot dry summers. To maximise watre retention, rectangular pits are dug in winter and autumn to trap water. Albariza also forms a hard crust that limits evaporation from the soil.
