What is the main grape used for Sherry?
Palomino
What are the cask used for Sherry maturation?
Butt
What is the Solera sytem?
Process of blending younger and older wines continually as they age, ensuring a consistent style.
What is Fino sherry?
Pale in color, dry, medium bodied, around 15% ABV
What is flor in Fino Sherry?
A layer of yeast that floats on the surface to protect the wine from air that would spoil it.
What is Amontillado Sherry?
Adding more spirit to increase alcohol and kill off flor. These wines oxidise and get a butty flavour. Usually dry and amber in color.
What is Olorose Sherry?
Deep brown, high alcohol, full bodied. They are dry but when sweetened they are called cream cherry.
What is PX Sherry?
Made from sun-dried PX grapes. Full bodied, syrupy, high sweetness.
How is port made?
A blend of black grapes. Contact with skins and fermented. A grape-derived spirit is added to stop fermentation. Aged in oak vessels.
What is 3 styles of Ruby Style Port?
Deeply colored and fruity.
1 - Ruby Port - non vintage, less than 3 years aging. Sweet simple, fruity
2 - Reserve Ruby Port - more intense, complex flavors.
3 - LBV - wine comes from a single years harvest. Intense red and black fruit, sweet spice.
What are Vintage Ports?
Bottled and unfiltered after a short period in large oak vessels.
Must be decanted after they age.
What are Tawny Ports?
Lighter style with toffee/caramel flavors.
Simply paler colored Ruby Ports
