What does interrupting the fermentation do?
Stops yeast from converting the sugars into alcohol resulting in a sweet wine.
What are two ways to do this?
- Filter out the yeasts
2. Fortify the wine with alcohol or add sulfur dioxide
What are the characteristics of Muscat wine?
Medium to full bodied, high alcohol, low acidity.
What liquid can be added to sweeten wine?
Unfermented grape juice
What are the 3 ways of concentrating the sugar levels in grapes?
- Dry the grapes
- Noble Rot
- Freeze the grapes
What are two examples using the dried grape method?
Recioto (Italy), PX (Spain)
How does Noble Rot work?
It attacks healthy grapes, weakening the sin, speeding up the evaporation of water causing them to shrivel.
What are some examples of noble rot wines?
Sauternes, Tokaji, Ausles, Beerenauslese, Trockenbeerenauslese
What are some grapes susceptible to noble rot?
Riesling, semillon, chenin blanc
What are characteristics of Sauternes AC wine?
Semillon grapes. Full bodied, high acid, high sweetness
What are characteristics of Tokaji wine?
Northeast Hungary. The higher the puttonyos, the sweeter the wine. Amber in color due to oak aging. Intense flavors of dried fruit and sweet spices.
What are characteristics of Beerenauslese/Tockenbeerauslese wine?
Low alcohol, medium body, very sweet, high acid.
How is ice wine made?
Grapes are crushed while they are still frozen. Results in full bodied, high acid, syrupy wines.
