What is yeast autolysis?
The lees (dead yeast cells) release flavors into sparkling wines.
What is the term for removing the lees?
Disgorge
What is riddling?
Slowly tipping and jiggling the wine bottle so the lees move to the neck.
What is the transfer method?
Instead of popping the seal to release the lees, release the entire content of the bottle into a pressurized tank , filter the lees, and put it back in the bottle.
