  • Pierre Peters ferments his wine in stainless steel but doesn’t rack until blending, keeps on gross lees. He says this is risky because in barrels you get reduction from the lees but oxidation from the wood. In steel the risk of forming H2S is that much greater, so you need really clean lees.
