Climate Change

  • Didier Gimmonnet harvests, on average, 21 days before his father did and generally produces higher yields.
    • But he says his dad, in a good year, would get 8.5 TA at 10% ABV. Today, Didier says a 10% ABV Champagne would not have ripe flavors. Today he believes you need 11% to taste ripe, and acids are typically 6.5-7.5 TA
  • Rodolphe Peters’ dad used to do all wines with complete MLF. But Rodolphe moved to partial MLF in 2005 because of warming climate.
