- Pierre Peters starts his fermentation at 13C (55.5F), keeps must between 13-15C until yeast population grows, then raises to 18C. When nearly done, raises to 20C.
- At Ch Ste Michelle the white barrels (no control) ferm from 20-23C (68 - 73.5F)

Dr. Ernie Loosen says on his steep slopes, things are far more temperate near the river, up the top of slope “barely warm enough to ripen potatoes”
