What is the base material for Rum production
1) Sugar cane juice = result in 6-8% abv after ferment. Obtaine by pressing / crushing the cane.
Name the 4 different flavour camps for Rum
Jamaican: Intense and pungent.
How much molasses is used to produce 1 l Rum at 57% abv.
Average 2,5 kg molasses.
Distillation of light rum:
Continuous still = Column still - multiple linked columns (stripper + rectifier)
Distillation of heavy rum:
Pot still - double distillation.
Maturation
White rum: tend not to be aged.

The worlds biggest selling rum.
Latin America rum
Bacardi is the best known brand!
Trinidad Rum
Dominated by one big producer: Angostura = 6 different brands.
Barbados rum
First major volume producer in the 18th century.
Guyana rum
During the 20th century a lot of distilleries were closed - their stills were preserved.
Jamaica Rum
The most punchy pot still rum.
Rhum agricole
Origins from french owned islands: Martinique, Guadeloape, Le Réunions.
