Niseko Mule
Muddle 3 chunks of cucumber with
1oz honey ginger syrup
1/2oz lime juice
2oz pepper gin
2 mint clusters
Shake and strain into highball decorated with cucumber lint.
Top with either ginger ale or sparkling water. Garnish with mint bouquet.
Smokey Choyajito
1oz choya original
1oz choya yuzu liqueur
1oz mezcal
Squeeze of lime juice
Pinch of salt
Shake with ice and strain into glass with cover dobe and ice sphere. Spray over yuzu twist. Burn rosemary sprig and stick into glass. Cover with dome.
Spicy Pomelo Punch
Muddle 1 slice of grapefruit with
3oz fresh grapefruit
1oz pineapple juice
1oz double spicy syrup
1/2oz lime juice
Rim the half of a highball with smoked sea salt. Shake with a pinch of smoked maldon and strain. Top with sparkling water. Garnish with pomelo slice and green pepper.
Shikuwasa Sour
1 egg white
1.5oz shikuwasa
1.5oz lemon syrup
Juice of 1 yuzu and 1 mandarin
Dry and wet shake, strain into coupe, decorate with grated kumbave and shichimi togarashi with yuzu.

2oz Toki
1oz lemon syrup
Juice of 1 yuzu and 1 mandarin
Japanese Penicillin
