Proteins

Amino Acids

Peptides
usually contain less than 20-30 aa’s
Hydrophobic Side Chains
low propensity to be in contact with water
Polar/Charged Side Chains
energetically favorable to be in contact with water
Condensation Reaction
forms peptide bonds between aa’s; covalent bond between C and N; water is released
Disulfide Bonds
Occur between two cysteines in a protein, between the sulfurs but one in an oxidizing environment; increases stability of a protein
George Mendel
1865, physical traits are inherited; each trait has two genetic factors

Griffith Experiment
1920s; rough vs smooth bacteria; heat killed smooth bacteria could transform rough bacteria
