•approx 50g/L residual sugar

What is appassimento method?

A

•grapes are picked earlier to retain acidity and prevent over ripeness
•grapes are laid out on bamboo racks, straw mats or wooden crates in well-ventilated rooms (fruttai)
•drying process may lasts from 1-6 months, cause water to evaporate, increase sugar concentration
•once dried, grapes are pressed and fermentation begins. If stops early: sweet wines (Recioto), if full fermented, dry high-alcohol wines (Amarone)
•aged in Slovenian oak for min 2 years from Dec 1 after harvest

What is ripasso (repassed) method?

A

•grapes skins from Recioto or Amarone that has been drained off are added to a vat that filled with freshly Valpolicella base wines (finished fermentation)
•yeasts are also transferred to ferment the remaining sugar on the grape skins, kick off the 2nd fermentation
•this helps to enhance colour, additional flavours, complexity, higher alcohol, tannins

•must used Ripasso method, production may not be more than double of the volume from the wines that used Ripasso process (Recioto, Amarone)
