- Baby carrots from norwich meadows farms (central NY state)
- Romesco sauce (pequilla peppers, hazelnuts, tomato)
- Salsa verde (parsley, oregano, capers, anchovy, garlic, EVOO, chardonnay vinegar)
Allergy: Nuts, gluten, allium (onion family)
TT: Baby carrots from NMF NY that are slowly roasted w olive oil so they caramelize, served over romesco sauce and finished w salsa verde
Crispy whole Mushroom
- Hen-of-the-Woods (Maitake)
- Cloumage (fresh lactic curd from cows milk, Shy Brothers Farm, MA) (cloumage similar to riccota)
- Piment d’Espelette (smoked red pepper)
- Preserved Meyer Lemon
- chives
- Black Pepper
Allergy: mushroom, dairy
TT: A whole crispy Henofthewoods Maitake mushroom fried in olive oil and finished w piment d’espelette & served over a cloumage cheese curd from shy brothers’ farm seasoned w smoked sea salt, black pepper, chives. Meyer lemon wedge
Torpedo Beets
Torpedo beets Cabernet vinegar Robiola cheese (Italian soft ripened) White chocolate Seed blend (chia, hemp, white/black sesame, rolled oats, flax) Pickled kumquat (small citrus fruit)
Allergy: Dairy
TT: The torpedo beets are poached in water w cabernet vinegar, sliced & arranged like petals on a bed of robiola cheese w white chocolate folded in, & finished w pickled kumquats & a blend of seeds
Shishito Peppers with Bottarga

Bottarga (made from the roe sack of red mullet, dried in salt until hard) intense & briny like the sea
Sea Salt
The Shishito peppers are blistered on the plancha in olive oil & finished w a light sprinkling of sea salt & a generous grating of bottarga

Brussel Sprouts
Brussel sprout petals Red onion Calabrian chili Meyer lemon Oregano EVOO
Allergy: Allium
The Brussel sprout petals, red onion, calbrian chilli, meyer lemon & oregano that are tossed & charred in a skillet & served warm.
Roasted Celeriac
Celeriac Maldon sea salt EVOO Black truffle butter Chives

TT: A whole celeriac that is cleaned, roasted, halved & scored, then finished w/ salt, oil, black truffle butter, & chives
