TT: The classic San Fransisco seafood stew is gjven a twist w/ the addition of Gochujang, & Korean chili paste, which gives it greater depth of flavor & some heat. Clams, mussels, crab, striped bass are cooked into a stew w shellfish liquor & brined tomatoes, & finished w a Carabineros shrimp. A grilled slice of country bread accompanies the dish.

- One of the most coveted prawns in kitchens worldwide, beautiful Carabinerosare a large deep sea prawn species that hail from eastern atlantic into the Mediterranean sea. Given their name by the Spanish- translates to police- shells match the uniforms of spanish customs police. Color doesnt change when cooked.
- more distinct and robust in flavor than other shrimps, they are also coveted for their large size.
- meat resides in their tail, their cephalothoraxes (head & body) are not overlooked
- excellent for making clear creamed soups & sauces which adds flavor & red color.

TT: Lamb neck cured w/ coffee, aleppo chili, palm sugar, salt. Slowly cooked w/ butter, thyme, & bay leaf. To order, seared in a cast iron skillet & served w/ jus w tomatoes & dates & finished w/ arugula, shaved baby heirloom carrots & watermelon radishes. There is a side of polenta cooked w/ butter & Parmigiano.

Served w/ a compressed persimmon & roasted Jimmy Nardello peppers & finished w green frilled mustard leaves & a rose vinaigrette

TT: short rib is brined for 36 hours in (water, salt, honey, parsley stems, lemon, black pepper, garlic) THEN rubbed w/ a mixture of the four peppercorns (pink, green, white & black) & coriander for 12 hours, then slowly roasted for 3 hours.
When plating, its finished w/ lemon juice & colatura & served w/ fresh lashings of celery, walnuts, castelvetrana olives & grated horseradish
