TT: Burrata from Lioni farms in Union NJ that is drizzled w/ Arbequina olive oil & topped w/ smoked trout caviar & julienned tempura fried leeks finished w/ a mustard powder.

Jicama Juice (jicama is a vine native to Mexico w/ a tuberous edible root)
Shaved sunchoke (edible root of a species of sunflower)

TT: Uncooked fillet of Hamachi bathed in a blend of green apple & jicama juices, & finished w/ a raw celtuce & sunchoke shavings garnished w fresh dill

TT: Very lean & tender Wagyu Beef diced & dressed w/ a puree of black trumpet mushrroms, japanese mustard, pickled eggplant, shallots, chives, & vlack pepper, topped w/ puffed farro & plated alingside a warmed egg yolk that sits atop a bed of breadcrumbs & anchovy dust.
Allergies: Eggs, fish, mushroom, nightshade, allium.
• puffed farro is a nutritious grain from Italy that is simmered in water until its belly bloats, then is dehydrated & fried in oil to make it puff.
Crispy Duck Wings
Duck Wings Juniper Corriander Duck confit Yuzu Kosho (japanese seasoning - paste of chili peppers, yuzu peel & salt)
TT: The Duck wings are cured in salt, sugar, corrisnder, & juniper. They are then cooked in duck confit & cooled. Then on order cooked in duck confit and tossed w/ Yuzu Kosho. They are Rich and have a mouth watering citrus spice.
