What are the characteristics of unsaturated fats?
Double bonds between carbon
found in plants fats
liquid at room temperature
E.g. olive oil, almonds, fish
What are the characteristics of Saturated fats?
Single bonds with carbon
Found in animal fats
Solid at room temperature
Raises level of blood cholesterol
E.g. bacon grease, lard, butter
Describe Hydrogenation?
Hydrogenation: hydrogen atoms are added to unsaturated fats (oils) making them saturated (solid fat)
What are the effects of partial hydrogenation?
Creates trans fats
List the characteristics of Steroids?
Lipids containing carbon bonded rings
E.g. sex hormones (estrogen/testosterone)
E.g. Vitamin D (bone building, Ca and P metabolism)
E.g. bile salts (fat digestion)
E.g. Cholesterol
What are the characteristics of Waxes?
Repel water
In animals - protect skin and hair
In birds - keep feathers dry
In plants (cutin) - restricts water loss
