What kind of dry wine does furmint produce?
Concentrated high acid white wines when young having flavours of apple and developing into nuts and honey when they develop. This is a late ripening varietal that is suseptible to botrytsis.
What does Harslevelu bring to Aszu?
It contributes perfume/
What does Sarga Muskolaty bring to Aszu?
Aromatic qualities.

What is szamorodni?
A process of selecting grapes that have been half infected with botrytis. This process means “as it comes”.
Describe the style of tokaj szamorondi.
- Wines must be aged in casks for 6 months
- Casks from dry wines are not completely filled and enable a flor-like yeast to develop.
- can develop characteristics like sherry
What are the three basic steps to make Aszu?
- A base wine is made with ‘healthy’ grapes.
- Before, during or after fermentation the Aszu berries are macerated in the base wine between 12-60 hours.
- The mixture is then pressed and then matured for a period of time in oak.
Describe a class Tokaj Aszu.
Deep amber colour, high acidity and intense aromas and flavours of orange peel, apricot and honey.
