Probiotic functions
Are live microorganisms which when administered in adequate amounts confer a health benefit on the host
Good bacteria keeps you healthy by supporting your immune function and controlling inflammation.
Help your body digest food.
▹Keep bad bacteria from getting out of control and making you sick.
▹Create vitamins.
▹Prevent bad bacteria that you may have consumed from entering your blood.
▹Breakdown and absorb medications.
Characteristics of probiotics
They must include:
Isolated from a human
survive in your intestine after ingestion
proven benefit
safely consumed
Main Job of probiotics
maintain a healthy balance in your body
Sauerkraut
Cabbage product resulting for a fermentation by a lactic acid bacteria microbial succession – potential source for probiotics
Lactic acid bacteria
Most probiotics belong to the lactic acid bacteria (LAB) group, which is composed of several genera, including:
Lactobacillus
Leuconostoc, Streptococcusand Enterococcus
GRAM +
How sauerkraut is made?
Product resulting from the spontaneous fermentation of cabbage in anaerobic conditions after the addition of sal.
Fermentation occurs over the course of several weeks, at temperatures ranging from 15 to 20°C.
It is performed by a microbial succession, characterized by two phases:
▹a heterofermentative phase
▹a homofermentative phase
