1. convert text to outlines
2. draw shardy triangles over text using Pen tool with black fill - no stroke
3. select each triangle in turn and:
   
   1. Object / Path / Divide Object Below
4. select everything and ungroup
5. now move those letter parts that have, effectively, been cut by triangles - hold down Shift to select pieces cut by the same triangle
