Kavalan means “flatland people” named after Taiwanese people that originally inhabited modern day Yilan, where the distillery is located

- Yilan is close to cold spring water of Snow Mountain and salty Pacific Ocean Air
- subtropical heat and high humidity cause “accelerated maturation”

- Vapors are cooled using tube condensers and sub-coolers
