Sushi Cone
Base: Soy paper dressed in sushi rice, spicy aioli, and tobiko
Middle: Pickled ginger, cucumber, crispy tempura shrimp, avocado, sesame seeds and micro greens
Top: Garnished with tobiko & pea shoots with soy sauce on the side to bring out the flavor (encouraged to drizzle a small amount on the cone)
ALLERGENS: Egg, fish, shellfish, sesame, soy, wheat, gluten, mustard
Seared/Pressed Salmon Sushi
Base: “Aburi Style” Salmon and sushi rice pressed into a custom press
Middle: Topped with thinly sliced salmon, umami mayonnaise and torched for caramelization
Top: Garnished with gyoza pieces, serrano chiles. Served with lime to squeeze on top of dish for balance the dish
ALLERGENS: Egg, fish, sesame, soy, wheat, gluten, mustard, onion, garlic
Tuna/Avo Crunch Roll
Base: Sushi rice, nori, marinated Ahi tuna, cucumber, avocado, pickled ginger
Middle: Tempura crumbs, spicy emulsion with tobiko
Top: Togarashi, ponzu sauce on the side
