When do you need to shake for longer?
For thicker or heavier liqueurs or mixers

3-5 shakes
How do you get the glass out of a Boston shaker?
ONLY use the palm of your hand against the tin to break the seal
What’s the more efficient method of straining a shaker?
Using a Boston shaker and straining in between the glass and tin
What happens when you shake for a while?
Drink doesn’t get cooler, but there will be more broken ice that could go into the drink (sometimes to customer’s preference)
What’s the purpose of shaking a drink?
- Mix
- Cool to an almost freezing point
- Aerate
- Dilute
How much ice do you put in the tin before shaking?
3/4 full
When can you tell you’re done shaking?
When condensation begins to form
When should you shake your drink?
Cocktail contains:

What shaken cocktails don’t need straining?
Cocktails that require crushed ice, not cubed
When is a blender used?
- Cocktails that need to be broken down to a higher degree
- Difficult to mix fruit smoothly with a shaker
(Remember to use crushed ice usually)
What’s the building technique?
Ingredients are poured into a glass one after the other. If drink needs to be mixed, a swizzle stick can be placed at the beginning
How do you use the layering technique?
Works well with mix of creams and liqueurs
When pouring, rest back of the spoon against the inside of the glass so the ingredients pour along the inside of the glass
Layer with heaviest ingredients at the bottom, lightest at the top
How do you use the flaming technique?
Can be used as an enhancement to the flavour, or as a spectacle.
Pour small amount of liquor into spoon and set alight. Pour liquor over drink
