What is the Charmat method?

A

Tank method.
This is there still wine is pumped into tanks with a measured amount of sugar and yeast.
The temperature is controlled to aid the second fermentation and the wine is circulated in the closed tanks by propellors.
The fermentation is completed in a couple od days.
The wine is drawn odd through filters, under pressure, and bottled.

What is the transfer method?

A

in this method the second fermentation and disgorgement is carried out in bottle (same as champagne) but the wine is then chilled and placed in a pressurised tank.
Dosage is added and filtered into clean bottles.
Used for quarter titles and large format champagne bottles.

A

This is the method of producing a sparkling wine by bottling the wine before it has finished fermenting.
