our dry aged selection is a 22oz. ribeye cut & uses the same USDA prime, midwestern, corned beef as the steak uses for our wet aged selections. it is common when dry aging to first wet age the steaks. similar to our wet aged selections, our dry aged steak is first wet aged for 7 days and is then dry aged for 45 days. the dry aging process compresses the natural flavor & intensifies the flavor of the steak
