Very strong in flavor, becomes super-dry.

あつ・かん Slightly Hot 50C/122F
Sharp flavors. Dry texture.
上燗
じょ・かん 45C/113F
Warm. Steam puffs out when sake is poured into a glass.
ぬる燗
ぬる・かん 40C/104F
Close to body temperature. moderately warm. Aromas open up the most. Mild flavor.
人肌燗
ひと・はだ・かん 35C/95F
A bit lower than body temperature. slightly warm. Aromas of rice and Koji become rich.
日向燗
に・なた・かん 30C/86F
neither warm or cold. Aromas open up. Smooth texture
冷や
ひ・や 18-28C/64-82F
“Unheated.” Room temperature. The orginal flavors and aromas can be enjoyed as they are.
鈴冷え
すず・ひ・え 15C/59F
Fragrant aromas. Thick texture.
花冷え
はな・ひ・え 10C/50F
Kept in fridge for a few hours. Clean.
雪冷え
ゆき・ひ・え 5C/41F
Very cold. Aromas close up. Clean texture can be enjoyed.
