1 disk of lime peel with some flesh
1 teaspoon cane sugar syrup
50ml rhum agricole blanc
no garnish
muddle lime and syrup in an old fashioned glass. add rum and fill with cracked ice, stir briefly.
Hemingway daiquiri (Daiquiri family)
37.5ml Flor de Cana 4-year white rum
12.5ml Luxardo maraschino liqueur
25ml grapefruit juice
12.5ml lime juice
1tsp simple syrup
garnish: 1 lime wedge
glassware: coupe
Zombie Punch (Daiquiri family, Mai Tai)
31.25ml Appleton Signature Blend rum
31.25ml Ron del Barrilito 3-star rum
18.75ml Hamilton Demerara 151 Overproof rum
12.5ml Donn’s Mix No.1
18.75ml lime juice
12.5ml Tailor velvet falernum liqueur
1tsp Grenadine
2 dashes Pernod Absinthe
Garnish: mint, cherry, orange slice, parason, pineapple wedge
glassware: tiki glass
crushed ice, whip shake
Donn’s mix No.1:
2 parts (in grams) grapefruit juice
1 part (in grams) cinnamon syrup (1:1)
Mojito (Daiquiri extended family)
10 mint leaves
18.75 simple syrup
1 white sugar cube
50ml Cana Brava white rum
25ml lime juice
garnish: mint bouquet
in a shaker tin, gently muddle mint with simple syrup and sugar cube until the cube breaks apart. add remaining ingredients and whip shake. dump into collins glass, pack with crushed ice and swizzle. top with 15ml soda water if desired
Mai Tai (Daiquiri extended family)
25ml Appleton Estate Reserve Blend rum
25ml La Favorite Coeur de Canne rhum agricole blanc
6.25ml Grand Marnier
25ml lime juice
12.5ml orgeat
6.25ml simple syrup
1 dash Angostura bitters
garnish: mint bouquet
glassware: double old fashioned glass
whip shake and dump into glass, pack with crushed ice.
Caiprinha (Daiquiri extended family)
1 lime
18.75ml simple syrup
1 sugar cube
50ml cachaca
no garnish
glassware: double old-fashioned glass
muddle lime quarters with syrup and cube in a shaker tin. add cachaca and shake with ice. dump into glass
Dark and Stormy (Daiquiri extended family, Tom Collins, Moscow Mule)
50ml cold seltzer
50ml Goslings Black Seal rum
18.75ml lime juice
25ml ginger syrup
garnish: lime wheel, candied ginger
glassware: collins
seltzer in glass first, short shake, strain and top with ice

whip shake, serve over crushed ice

25ml El Dorado 15-year rum
25ml Appleton Estate v/x rum
6.25ml La Favorite Rhum Agricole Blanc
12.5ml Rhum Clement Creole Shrubb
25ml lime juice
18.75ml orgeat
1 dash Angostura bitters
garnish: mint bouquet
glassware: double old fashioned
short shake with lime wedge in tin, 3 cubes of ice.
Queens Park Swizzle (Daiquiri extended family)
10 mint leaves
18.75ml simple syrup
1 white sugar cube
50ml Cana Brava rum
25ml lime juice
4 dashes peychauds bitters
4 dashes Angostura bitters
garnish: mint sprig
glassware: pilsner glass
gently muddle mint and sugars in tin, add rum and lime then whip shake and dump into glass. add crushed ice and swizzle until cold. top with bitters

3 blackberries
50ml Flor de Cana extra-dry white rum
18.75ml lemon juice
6.25ml ginger syrup
6.25ml orgeat
6.25ml honey syrup
garnish: peychauds bitters
glassware: pilsner glass
muddle blackberries on the bottom of glass. whip shake remaining ingredients and dump. top with crushed ice.
