What element do proteins contain in addition to carbon, hydrogen, and oxygen?
Nitrogen
What are proteins made of?
Amino Acids (there are 22-22 AA all arranged different ways)
What are the functions of structural proteins?
Repair and build new tissue such as:
- core of bones and teeth
- mucosa
- tendons and ligaments
- nails, hair
What are the functions of working/functional proteins?
- Regulate osmotic pressure
- transport oxygen and nutrients in blood
- help body fight infection and disease
A protein deficiency that occurs rapidly. Produces a distended abdomen.
Kwashiorkor
A protein deficiency from chronic malnutrition. Appear very thin.
Marasmus
Essential Amino Acids
- AA that the body cannot produce
- 8-10 of them
- from animal proteins
Non-essential amino acids
Body can produce them
What are complete protein food sources?
Contain all the essential amino acid groups.
Examples: meat, fish, eggs, milk
What are complementary protein sources?
Not complete on their own but when eaten together provide a complete source.
Eg grains and legumes, dairy and nuts
