What are essential amino acids?
Amino acids which cannot be made in the body
These are essential for maintaining a healthy and balanced diet
What are the chains in protein forms held by?
Intermolecular forces between the side chains and the amino acids
What is denaturing?
When proteins are heated, the intermolecular bonds are broken, allowing the proteins to change shape (denture)
What effect does denaturing of proteins have on food?
It causes their texture to change when they are cooked
What are enzymes?
Proteins which are able to catalyse biological reactions (biological catalysts)
What happens during digestion?
Enzymes hydrolyse to break down proteins from foods into amino acids to form the substances we need to function
Which 2 functional groups do amino acids have?
Carboxyl, amino group (-NH2)
