Two types of proteins
Fibrous and globular
Fibrous proteins
Long spiralling chains folded to form structures like hair and fingernails.
Generally insoluble in water.
Globular proteins
Chains of amino acids folded into spherical shapes and form structures like haemoglibin, enzymes and hormones.
Generally soluble in water
How are proteins formed
By the condensation of thousands of amino acids
Functional groups of amino acids
They have the amine: -NH2
And carboxyl: -COOH
Essential amino acids
Amino acids that the body is unable to synthesise on its own.
How does the body obtain amino acids?
From eating protein in our diet
When drawing protein molecular structure-
Amino acids join from the N-C, there are open bonds at these points on either side of the protein.
How to count number of amino acids in a protein
Count number of C=O, or number of amino acid links plus 1 (except in a circle)
How are proteins held together.?
By the hydrogen bonds between amino acids
What does heating do to the proteins
It breaks apart the hydrogen bonds between molecules
