What are amino acids?
Amino acids are what make up protein. Made up of carbon, hydrogen, oxygen and nitrogen (C.H.O.N) Separate when digested
What is the structure of protein?
Amino acids, which are represented by shapes joined with peptide links
What is the classification of protein?
High biological value (HBV) and low biological value (LBV). High biological value contains all necessary amino acids that are not made by the body, these amino acids must be gotten from food.
Sources of HBV?
Mostly animal sources
• Meat, fish, eggs, milk and dairy produce, soya beans, quorn
Sources of LBV?
Mostly plant sources
• Peas, beans, lentils, nuts, whole cereal, muesli
Functions of protein?
- For the growth of all body cells, e.g. skin and bones
- The repair of worn out or damaged cells
- The production of hormones, enzymes and antibodies
- Excess protein is used for heat and energy
Composition of protein?
Proteins are made of amino acids.
