Classification of carbohydrates?
Sugar, starch and dietary fibre
Sugar sources?
Honey, jam, cake, biscuits, fruit, milk, ice cream
Starch sources?
Cereals, potatoes, root vegetables
Fibre sources?
Vegetables, fruit (skins), brown rice, brown bread, brown pasta
What is the RDA of fibre?
RDA = 25-30g per day
Functions of carbohydrates?
- Sugars and starchy foods provide heat and energy.
- Fibre helps with the movement of food in the body
- Fibre gives a feeling of fullness
Dietary fibres, or cellulose facts
It is not digested by the body
It is important as it aids digestion by helping to push food through the intestines
It stimulates peristalsis, the contraction and relaxation of the intestine muscles
It prevents constipation and disease
Absorbs water, giving the feeling of fullness
Composition of carbohydrates?
Carbon, hydrogen and nitrogen (C.H.O)
Carbohydrates are made up of simple sugars (e.g. glucose) which join together to form starch.
