Clams- Range in color from pale to deep orange
Oyster - typically creamy white but may also be tinted green, red, brown, or pink
Mussels - can be light tan to deep orange

sweet and moist scallops- should have a mild, sweet odor and look moist but should not be standing in liquid or direct contact with ice
SEA SCALLOPS - usually creamy white and may be tinted light orange or pink
BAY SCALLOPS - also creamy white and may be tinted light tan or pink

- have hard shell and moving legs
- must be cooked live or killed immediately before cooking

- if fresh - tightly closed shell should be left in a large bucket lightly salted water in about 3 hours (process of purging - removes sands)
- scrub the shell w stiff brush put in pan 1cm1/2 water. cover cook in low heat, shake pan frequently, when it opens remove from the pan

Cover the pan with a lid and bring the water to slowly boil

- usually sold really cook, live can be ordered in advance. grey to bright red
Fishmongers supply live lobster with fierce pincers secured with rubber bands

rinse under cold running water/ put in salted boiling water/ cover and boil/ simmer low heat/ leave to cool
