  • if fresh - tightly closed shell should be left in a large bucket lightly salted water in about 3 hours (process of purging - removes sands)
  • scrub the shell w stiff brush put in pan 1cm1/2 water. cover cook in low heat, shake pan frequently, when it opens remove from the pan
