Tortellinii?

Saffron pasta is filled with the swiss chard/ricotta. in a separete pan shallots, garlic and chili flakes are sauteed, deglazed with white wine, reduce down and add Foraged mushroom, rainbow swiss chard leaves and stems ( tallo ), then tranfer into a bowl and garnish with persialle, parmesan, chives, black winter truffle.
