Can grow multiple crops per year

What does Ethene in plants do
Stimulates an enzyme which causes the fruit to ripen
When transporting fruit over long periods at a time how does it work without the fruit ripening.
The fruit is picked early
We block its effects so it doesn’t ripen to early
When the food reaches us we use Ethene to ripen the fruit
so it’s ready for sale
Why do we block the fruits effects before transporting
Most plants naturally produce Ethene
