What is the method for piping sponge (lady fingers)?
A
- Whisk together 40 g sugar and egg yolk until pale and increased in volume.
- Sift the flour.
- Whisk the egg whites to medium-firm peaks, then gradually add remaining 90 g caster sugar.
- Fold the egg yolks together with one third of the whites. Fold half the flour into this. Alternate folding in the remaining ingredients in separate inclusions: meringue, flour, meringue.
- Pipe using a plain no. 6 tube onto silicon paper at an angle at least 8 cm wide, the full length of the small black tray, then pipe a 1 x 14 cm and 1 x 12 cm diameter circular disc.
- Sprinkle generously with the desiccated coconut.
- Bake at 190°C for approximately 7 minutes, cool on a wire rack.
