What is the preparation of hot soufflé?
To make a traditional hot soufflé, whipped egg whites are folded into a flavoured base (usually crème pâtissiere or béchamel with egg yolks), carefully spooned into buttered and sugared ramekins and placed into a hot oven.
The bubbles in the egg white foam expand while baking and cause the soufflé to rise.
A successful soufflé should rise at least an inch above the rim of the mould.
