Pâte brisèe recipe?
130 g plain flour
65 g butter
2.5 g salt
13 g sugar
3 g cold water
40 g eggs
Pâte brisèe method?
1) Add the butter & sifted flour to a bowl & sablage the flour & butter together.
2) Add sugar & salt & combine everything together.
3) Create a well in the centre & add egg & cold water & combine.
4) Form dough into a disk, wrap, and chill.
5) Ideally allow the dough to rest for an hour or place in blast chiller for 7-10 mins.
6) Roll out the dough & line tart ring.
7) Add desired filling & bake at 175°C to 180°C for 25 mins.

How can you store Pâte Brisèe & how long for?
Shortcrust pastry should be kept refrigerated covered in cling film for 1-2 days.
