What’s the definition of cremé citron?

Crème de citron recipe?
A
100 ml lemon juice
150 g caster sugar
30 g egg yolks
150 g whole eggs
170 g butter
2 sheets gelatine

Crème de citron method?
A
- Soak the gelatine in cold water.
- Warm the lemon juice.
- Whisk the sugar, egg and egg yolks until smooth.
- Combine with the hot juice and cook until it thickens. Add in the bloomed gelatine. Add the butter, strain if needed, pour into baked and cooled tart shell while warm.

How do you store crème de citron?
A
In a covered, airtight container for up to one week. It doesn’t really freeze well.
