Nettles are blanched and pureed with egg yolks and mixed with flour to make the green pasta dough which is then formed and blanched. Artichockes, fiddleheads, and preserved lemon are seared in a pan until caramelized. Baby artichokes are fried. Then goat’s milk, whey, and butter, are added to make a pan sauce. Once at the consistency the pasta and fried artichokes are tossed in. The dish is topped with shaved pecorino and tangerine marigold flowers.

The duck confit is seared with morel mushrooms. Once crispy ramps, ramp vinegar, just are added with butter to make a pan sauce. The pasta is tossed in once the sauce reaches the right consistency with the arugala to slightly wilt the arugala.
