Define surmaturité
A
French expression often used by Anglophones for overripeness, a usually undesirable stage in grape maturity whereby grapes start to shrivel and acid levels fall to a dangerously low level. Some Australians refer to this stage as exhibiting “dead fruit” flavors. It may well be the result of the continuing fashion, in parts of California in particular, for extended hang time.
