process of cutting carcasses into standard wholesale (primal), smaller subprimal and retail cuts
Meat Fabrication Principals
- Tender meat is separated from tough meat
- Thick portion must be separated from the thin portion
- Cheap part must be separated from the expensive part
- Muscles must be cut across the meat fiber/grain
