What are the two organic chemicals that make up lipids?
Fatty acids and glycerol
What is the chemical formula for glycerol?
C3 H8 O3
What is the basic structure of a lipid?
Carbon, hydrogen and oxygen (lower proportion of oxygen than carbohydrate)
What is the structure of glycerol?
Three carbons each with a H at the top and an OH beneath. The two carbons on the edge have a H to their side
What is the structure of a fatty acid?
A hydrocarbon chain of just carbons surrounded by hydrogens forming a chain. This fatty acid ends with a carboxylic acid group
What are the two ways a fatty acid vary
Length. Saturated or unsaturated
What does saturated mean?
There are no double bonds in the chain, this means there are no links which makes intermolecular attractions more likely so the molecule does not move freely. This makes it solid at room temperature.
What does monounsaturated mean?
There is one double bond in the chain.
What does polyunsaturated mean?
There is more than one double bond
What results in a glyceride combines with one fatty acid?
A monoglyceride
What results in a glyceride combines with two fatty acids?
A diglyceride
What results in a glyceride combines with three fatty acids?
A triglyceride
What bond joins the fatty acid and glycerol?
Ester bond, formed by a condensation reaction (Esterfication)
Where do the bonds that join the molecules form?
The carboxylic acid go up of the fatty acid and of the glycerol
