  1. Both saturated and unsaturated fatty acids have a hydrocarbon chain.
  2. In saturated fatty acids, carbon atoms are joined together by single bonds. In unsaturated fatty acids, there are one or more double bonds between carbon atoms in the hydrocarbon chain.
  3. The double bonds in unsaturated fatty acids cause the carbon chain to kink. Therefore unsaturated fats cannot pack together tightly.
    The single bonds in saturated fatty acids allow them to pack together compactly
  4. They both have low melting and boiling points needed to break weak intermolecular forces
