What are the seven steps in wine making?
The Crush The Must Fermentation Working the Wine Pressing Off Maturation Blending and Bottling
What are the skins/seeds/stems called that float to the top of the juice?
The cap.
What happens in the must stage?
Juice is tested for acid and sugar to ensure healthy fermentation. Adjustments are made.
What is the key to healthy fermentation?
Temperature
What happens in the “working the wine stage?”
Maceration - keeping the must in contact with the skins to add color and tannins
Pump Over - Pumping the juice from the bottom up and over the cap.
Punching Down - forcing the cap back down in contact with the must/juice
Rack and Return - similar to Pump over but pumping to a separate holding tank before pumping back and over the cap.
What happens in Maturation?
Battonage- stirring Sur Lee Aging - Racking - moving to other barrels for clarification Clarification Filtration
