Lecture 16 Flashcards
What nutrients do insects provide?
They are a source of high quality protein. Crickets contain nine essential amino acids. Cricket flour contains more calcium then milk and more iron than spinach.
Do insects have more unsaturated fatty acids (UFA) or saturated fatty acids (SFA)?
More unsaturated fatty acids (UFA)
Chitin
Found in the exoskeleton of insects. Chitin is a polysaccharide. It naturally boosts the immune system of poultry which eliminates the need for antibiotics which go up the food chain into humans.
Micro algae
Simply referred to as algae.
Macroalgae
Known as seaweed.
Autotrophic
Most types of algae is this. Means that algae can harvest carbon dioxide and convert it to organic matter.
Omega 3 acids in fish is found where?
It is found in the microalgae consumed at the bottom of the food pyramid and is then gradually passes up to the fish at the top.
Seaweed
Used as sources of gelling or thickening agents.high content of essential amino acids and their relative high levels of unsaturated fatty acids.
Constitutes a source of dietary fiber that differs chemically and physicochemically from those of land plants and thus induce different physiological effects.
What is the amount of protein in algae comparable to?
According to WHO/FAO it is comparable to that of protein in egg, soy, and wheat. This is why algae based products could become a sustainable alternative to meat milk or eggs in the long run
True or false: fresh algae should not be considered a direct replacement for other protein sources
True
Vitamin B12
Often missing in plant based diets because it is mostly found in meat, fish, dairy, and eggs. Algae could be a good source of this.
What does algae store large amounts of?
Store large amounts of carbohydrates in starch grains and in their cell walls.
Cultivated microalgae
Spiraling and Chloe Ella are sold as nutritional supplements
Over the past decade start ups have been establishing with microalgae species are most effective in producing Omega 3
Omega 6 and omega 3 fatty acids are incorporated into infant formulas and added to dairy products, table spreads, and mayo.
Carrageenans in Red Algae.
Red powder extracted from algae. Cell walls of sea vegetables or marine algae are in in sulfates polysaccharides like this one.
