Lecture 17 Flashcards
Resvertrol
A polyphenolic compound. Well absorbed by humans and it’s bioavailability is relatively low because it is rapidly metabolized and eliminated.
What is Resveratrol found in?
Grapes, wine, grape juice, peanuts, cocoa, blueberries, bilberries, and cranberries.
Resveratrol content in wine?
Content is usually low, highly variable and unpredictable. It is only a minor compound in the complete set of grape and wine polyphenols.
Alcohol consumption and heart disease
Moderate alcohol consumption has been consistently associated with reductions in coronary heart disease risk. Not clear if red wine Polyphemus oils confer any additional risk reduction. Mediterranean diet includes daily consumption of wine in moderation.
White wine and Resveratrol
Grape skins are removed during early production of white wine. These wines generally contain less Resveratrol than red wines.
Grape seed oils
By-product in wine making process.
Chemical components in wine
Anthocyanins, tannins, flavonoids
Mediterranean diets vs lacto-ovo -vegetarian diet
Low calorie lacto-ovo-vegetarian and Mediterranean diets appeared equally effective in reducing cardiovascular disease risk factors. Vegetarian diet was more effective at reducing LDL (bad) cholesterol.
What is a healthy dietary pattern
rich in fruits and vegetables, legumes [beans], whole grains and
nuts; focusing on diet variety, nutrient density and appropriate amount of food; and
limiting energy intake from saturated fats
Coffee consumption and coronary hear diseases
Habitual moderate coffee drinking was associated with a lower risk in women.
Coffee, tea, and cocoa and risk of stroke
Tea and chocolate consumption may reduce risk of stroke.
Antioxidant activity of common,y consumed polyphenolic beverages (coffee, cocoa, tea)
Addition of milk didn’t impact antioxidant activity.
Chocolate
Mixture of opinions from being claimed as an antidepressant, causes acne, weight gain, tooth decay
Cocoa butter
In cocoa it is non existent. Chocolate contains (smaller number of antioxidants compared to cocoa).
3 fatty acids in cocoa butter
Monounsaturated fatty acid, saturated fat (palamitic acid), saturated fat (stearin acid).
Saturated fat- stearin acid: no effect on blood cholesterol
